Though today will still be in the low 80′s, it’s finally cooling down in Georgia. Yay, Autumn is here! This means doing all sorts of things that the hubby thinks are silly like putting a fall wreath on the front door, and insisting on making hot drinks even though we can still comfortably wear shorts. I pulled out the “I Love Fall” touch-and-feel book for K, and she was just as excited as I was to read about pumpkins and leaves and scarves.
To celebrate, I think I’ll enjoy a hot drink with pumpkin pie spices, oh and make some mashed potatoes…
Meal Plan
*Breakfasts: Hot Quinoa “oatmeal,” GF cold cereal w/almond milk, GF pancakes w/almond butter, Bananas
*Lunches: Leftovers/ Rice & Beans/ Rice & Stir-fried veggies
*Snacks: Apple/banana with almond butter, Edamame, Rice & nori (seaweed) w/kimchi, Carrot sticks w/hummus, cheese & gf crackers
*Drinks: Water, ( iced)green tea, (iced) white tea, herbal teas, (iced) “fruit juice” (really, really, really watered down – like 8 parts water to 2 parts juice), and carbonated water with juice, the occasional caff. free diet pepsi (I know, I know…)
Monday
- Lunch: Baked potato w/fixings
- Dinner: Chicken Cacciatore w/mashed Yukon Golds & simple salad – romain, spinach, tomato, onion, carrots
(I feel like potatoes instead of rice or pasta. They may not exactly go together, but should still be tasty.)
Tuesday
- Lunch: Gf sandwiches (As far as prepared mixes for the bread machine go, I like Pamela’s.)
- Dinner: Huevos Rancheros w/black beans (I’m probably not making my own salsa for this…) & fried platanos
Wednesday
- Lunch: Leftovers
- Dinner: Fried polenta) w/marinara, portobello mushrooms, garlic, spinach & basil & Black Bean Brownies (oh, you know you want some!)
Thursday
- Lunch Leftovers/sandwiches
- Dinner: Enchilada bake (Like lasagna NewMex style. I’m going to double this, and probably use Mozzarella instead of Cheddar.)
Friday
- Lunch: Leftovers
- Dinner: Fish taco Friday at Barberitos
Saturday
- Lunch: “Egg” salad sandwiches (tofu)
- Dinner: Grilled Cauliflower & Black bean tacos w/grilled corn, cilantro & cotija cheese & fried platanos
Sunday
- Baked apples – either for breakfast or dessert at lunch (see below for some recipe links)
- The healthiest recipe I found, or maybe this one, okay this is the last option but since it’s not crockpot I’m not sure…
- Lunch: Baked salmon w/quinoa pilaf (I didn’t make this happen last week, so here it is again…)
- Dinner: Leftover tacos
Alternative lunch or dinner – if I feel like miso:

- Bananas – K and I eat one of these a day (each) so they’re always on the list.
- Basil
- Cauliflower
- Cilantro
- Portobello mushrooms
- Enchilada sauce (haven’t made my own at this point…)
- Garbanzo beans (for hummus)
- Fresh lemon & lime
- Apples (for baked apples)
- Walnuts or pecans for baked apples

Most weeks I don’t really feel like meal planning, so carving out some time on Mondays and forcing myself to do it really helps me. Plus, then as with most things, once I’m planning I really enjoy it.
